In pursuit of the kind of wealth they had never dreamed of, they left their families and hometowns. It requires hard labor to make money by digging — some are unable to stand it, while others labor hard, but from some cause or other, make comparatively nothing. The labor in mining may well be compared to that of canaling through a rocky country, for gold is always found among the rocks, and to get it you must remove them, and then, in a wooden bucket, pack your dirt to the water so as to wash it in your machine. While some miners did strike it rich in the early days, those that made most money were the ones who “mined the miners.” Imagine the joy of the woman who made $18,000 by baking and selling pies in the gold fields. Or of the foresighted man who arrived in San Francisco in July 1849 with 1,500 old newspapers which he sold to miners, hungry for news from back east, for a dollar each. Also opened in 1908, Phillipe’s is the second restaurant to claim ownership of the French Dip. Owner Philippe Mathieu claims that the sandwich was invented in 1918 when he accidentally dropped the roll into a vat of hot jus and the customer said he didn’t care. The name of the sandwich was coined because of the dipping into the jus and because of Mathieu’s French heritage—although another telling of its history claims the customer was French. As gold became more and more difficult to reach, the growing industrialization of mining drove more and more miners from independence into wage labor. There’s great sushi almost anywhere in America, but from top to bottom, it’s hard to argue that the incredible quality — and tradition — of Los Angeles’s sushi is unmatched.
